When asked why Tapatío instead of Sriracha, the mainstay of Vietnamese hot sauces, Sam grinned and exclaimed that it “gives more of a kick.” He then proceeded to tell me that his friend Carlos, an immigrant from Mexico, introduced him to the sauce and that he has been in love ever since. However, when he was finished constructing his sandwich, Sam reached for a bottle of Tapatío, a Mexican hot sauce, and doused his sandwich with it. For the entirety of the encounter, everything about the meal seemed traditionally Vietnamese. During our time together, I helped them cook various traditional Vietnamese dishes, conducted several interviews, and most importantly, got to know them as people.ĭuring my first participant observation with Sam, a man in his 30s, he chose to prepare banh mí, a popular Vietnamese sandwich. For several months, I spent time with three Vietnamese individuals who will be referred to as Sam, Sue, and Sarah to maintain confidentiality. To study whether or not this effect was unique to my family, I sought out Vietnamese individuals in Chapel Hill in order to observe how globalization has changed their beliefs, customs, and. Having been raised by Vietnamese immigrants, I was able to experience the effects of globalization on my own culture, which included my parents adopting increasingly American values over time and a transition from Thịt kho and Bún bò Huế, two traditional Vietnamese dishes, to a weird hybrid type of Vietnamese food that includes elements of other cultures. In this ethnographic study, I observe how an increased interconnectedness results in changes to Vietnamese cuisine, which in turn reflects changes in Vietnamese culture. These ideas support the argument that cuisine both contributes to and is affected by the forces of globalization. Additionally, Samantha Barbas argues that by observing the way food changes within a culture, it is possible to analyze the extent of cultural interaction and the history of exposure of different cultures to other cultures’ foods becomes possible (2003). As a reflection of culture, Lynne Phillips claims that food can be used as an agent to study globalization specifically, how the mobility of people and of ideas about cuisine and nutrition has helped nourish it (2006). More importantly, food is culture, helping to distinguish one from the others in the world. However, food is more than survival it is pleasure, identity, and status. As people are exposed to it three or more time per day, food’s importance is often limited to the nutritional role it serves.
